New Caledonian cuisine reflects the diversity of its people, with Melanesian, French, Polynesian and Asian culinary options. Specialities include bougna, a traditional Kanak dish made from yams, taro, cassava, sweet potatoes and poingo bananas, accompanied by fish, marinated prawns or chicken in coconut milk and cooked in an underground oven - yum!

French is New Caledonia’s official language, but English is increasingly spoken more widely. There are also many Kanak languages and dialects including Drehu (Lifou).

Located in the Pacific Ocean, Nouméa is a mere three hours from Auckland, flying direct on either Air New Zealand or Air Calin. They keep their clocks set to the same time year-round and during winter the time difference is 1 hour behind New Zealand.
